To take things up a notch and TRULY make the BEST pork steak recipe that you can, taking the time to marinate the meat before baking them in the oven is literally a game-changer!

These are super delicious without the marinade too, but infusing the marinade with a touch of BBQ sauce gives you a BBQ flavor throughout every single bite.

What are pork shoulder blade steaks?

Pork steaks (also called pork shoulder steaks) are cut from the shoulder or pork butt, the same cut that we get pulled pork from. They are a fattier cut of meat, but super flavorful and perfect for marinating.

Ingredients you'll need

  • pork shoulder blade steaks- we used bone-in pork steak, sometimes they're sold as boneless. Get the bone-in if you can, otherwise the boneless ones will cook faster.
  • pork steak marinade (optional)
  • BBQ sauce

What's in the marinade

  • avocado oil (or olive oil)
  • apple cider vinegar
  • BBQ sauce
  • pork rub

To make the marinade, we used our homemade pork rub recipe. It keeps for 6+ months in a small jar and makes more than the recipe needs. Your favorite store-bought brand can be used instead!

How to cook pork steaks in the oven

Marinate, bake, brush on BBQ sauce, briefly broil, and enjoy!

  1. Make the marinade. Combine the oil, apple cider vinegar, BBQ sauce, and pork rub in a small bowl. Add the 4 steaks to a gallon size Ziplock bag and place it inside of a larger container inside of the fridge. Let the pork marinate for 2-24 hours.
  2. Remove them from the fridge 30 minutes before cooking, this helps the pork cook more evenly by taking the chill off.
  3. Preheat the oven to 400F and line a baking sheet with aluminum foil.
  4. Place the pork shoulder steaks on the baking sheet, leaving space between them.
  5. Bake them uncovered for 30-35 minutes or until internal temp reaches 145 F+ when checked with a digital meat thermometer.
  6. Brush BBQ sauce on both sides of the pork and broil them for 1-2 minutes to get that "just grilled" appearance. Serve with more BBQ sauce on the side, enjoy!

Jenni's tips

  • If you're using the marinade, they'll need to soak for 2 hours in the fridge.
  • We just add BBQ sauce at the very end of the recipe, otherwise, the sugars in the sauce can start to burn if you add it too soon.
  • For best results, we do recommend that you use a digital meat thermometer to check for doneness.

How do you cook pork shoulder blade steaks without drying them out?

The best way to prevent them from drying out is to not overcook them. Pork is considered done when the internal temp reaches 145 F when checked with a digital meat thermometer.

You can also brine or marinate pork steaks like we did in our recipe. You can also pan sear them on the stove for a 2-3 minutes on each side to create a crust and lock in the flavor.

  • 4 pork steaks 2-2 ½ lb total (8-10 oz each)
  • pork steak marinade optional
  • ¼ cup- ½+ cup BBQ sauce divided
  • ½ cup avocado oil or olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons pork rub homemade link below or store bought

Instructions

Marinating

  • Combine the oil, apple cider vinegar, ¼ cup BBQ sauce, and pork rub in a small bowl. Combine the marinade ingredients. Add the 4 steaks to a gallon size Ziplock bag and place it inside of a larger container inside the fridge. Let the pork marinate for 2-24 hours.

  • Remove the pork from the fridge 30-60 mins before cooking to start bringing them up to room temperature, this helps them to cook more evenly.

Baking

  • Preheat the oven to 400 F and line a baking sheet with aluminum foil.

  • Lay the pork shoulder steaks on the baking sheet, leaving room in between them.

  • Bake them uncovered for 30-35 minutes until internal temp reaches at least 145 F when checked with a digital meat thermometer inserted into the thickest part of the meat.

  • Brush BBQ sauce on both sides of the pork and broil them for a couple of minutes to get that "just grilled" appearance. Serve with more BBQ sauce on the side, along with your favorite BBQ favorites of course!

  • To make the marinade, we used our homemade pork rub recipe. It keeps for 6+ months in a small jar and makes more than the recipe needs. Your favorite store-bought brand can be used instead!
  • We just add BBQ sauce at the very end of the recipe, otherwise, the sugars in the sauce can start to burn if you add it too soon.
  • Pork steaks are sometimes sold as individual boneless steaks, or as large 1 lb+ bone-in steaks. You can also find thin- cut pork steaks. For recipe testing, we used large bone-in steaks and cut them in half, which left one steak with the bone and the other boneless. If the kind you buy are thin cut or are small boneless chops weighing less than 8-10 oz, you can still follow this recipe they just might cook faster than our recipe. A digital meat thermometer comes in handy to prevent the meat from overcooking!
